Refreshing Applemint Iced Tea

Ingredients

1/4 cup shredded fresh mint
3 peppermint tea bags
2 cups boiling water
1 1/4 liters chilled clear apple juice
1 tablespoon fresh lime juice
1 apple, chopped

Directions

Divide shredded fresh mint among the compartments of an ice cube tray, and fill with water. Freeze until solid. Steep peppermint teabags with the boiling water for 10 minutes, then remove the teabags and chill tea until cold. Combine apple juice with the chilled peppermint tea and fresh lime juice. To serve, fill glasses with mint ice cubes and chopped apple, topping with peppermint tea.
