Poached Pears with cinnamon and cranberries

Ingredients:

  • 1 pkg dried Cranberries
  • 2 cup Sugar
  • 2 tsp Cinnamon
  • 2 cup orange juice
  • 3 bosc pears (firm but ripe bosc pears peeled cored)

Directions:

  1.   Combine sugar, cinnamon and juice in heavy large skillet
  2.   Bring to boil on med high, stirring until sugar dissolves
  3.   Add cranberries, Simmer over medium heat stirring often, about 5 minutes
  4.   Cool slightly then puree in processor until smooth
  5.   Strain into same skillet
  6.   Bring puree to simmer over medium heat
  7.   Add pears and stir to coat
  8.   Simmer until pears are just tender, about 8 minutes
  9.   Using slotted spoon, remove pears from skillet, and serve
