Lemon bars and springtime just seem to go together! This recipe uses an 8″ square baking pan and makes about 9 servings. You can double the recipe and make it in a 9 x 13″ baking pan if you need a larger amount.

INGREDIENTS:
CRUST:
- 1 cup unbleached or all-purpose flour
- 1/3 cup butter, softened
- 1/4 cup sugar
TOPPING:
- 1 cup sugar
- 2 eggs
- 2 Tbsp. unbleached or all-purpose flour
- 2 Tbsp. lemon juice
- 1/2 tsp. lemon extract
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- Powdered sugar for dusting
DIRECTIONS:
Combine all the ingredients for the crust and pat into an 8″ square baking pan. Bake at 375 degrees for 15 minutes. While crust is baking, combine the sugar, eggs, flour, lemon juice, lemon extract, baking powder, and salt in a bowl; mix until frothy. Pour this mixture over baked crust. Then bake the crust and topping together at 375 degrees for an additional 18-22 minutes or until light golden brown. Cool completely and dust with confectioners’ sugar, then cut into squares. Good served chilled.
