FAST FIXIN FRUIT – N – CAKE

Make this quick and easy coffee cake for your next office meeting.

INGREDIENTS:

Cake:

1 pkg. white cake mix
1/4 c. oil
3 eggs
1/2 c. water
1 can pie filling (cherry, apple, blueberry, etc.)

POWDERED SUGAR GLAZE

Optional:

Almond Paste

½ cup Sliced Almonds

DIRECTIONS:

Preheat oven to 350 degrees. Cover a Sheet Pan with Parchment Paper. Put cake mix, oil, eggs, and water into mixing Bowl; stir  until blended (about 2 minutes); scrape sides and spread batter evenly

Spoon pie filling into batter; use a Bamboo Spoon to fold into batter just enough to create marbled effect.

Optional: Cut the almond paste into small ¼ inch pieces. Chop almonds Sprinkle on top of the cake batter.

Bake at 350 degrees for 30 minutes until toothpick comes out clean.

Remove cake from oven and allow to cool in pan for 10 minutes on Cooling Rack. Lift up the Parchment Paper to remove the Sheet Pan. Allow to cool 10 more minutes on counter.

While cake is cooling, prepare powdered sugar glaze. Drizzle glaze on cake. Allow glaze to dry before cutting into 16 slices .
