Reuben Quesadillas

Leftover corned beef? This recipe uses your St.Patrick’s Day leftovers and tortillas to make a fresh approach to classic Reuben sandwiches.

12 ounces of Corned Beef
2 cups packaged Broccoli Slaw
1/4 cup 1000 Island Dressing
12 (6 inch) Flour Tortillas
3 cups (12oz) shredded Swiss Cheese

1. Chop corned beef.

2. Mix together slaw and dressing.

3. To assemble: place two tortillas on griddle. Evenly layer each with 1/4 cup cheese, 1/3 cup corned beef, 1/3 cup slaw mixture and additional cheese, top each with second tortilla. Grill qesadilla until golden brown on both sides and cheese is melted, turning once. Repeat for additional quesadillas.

4. Cut into wedges and serve with additional 1000 Dressing.
