The week between Christmas and New Year’s is filled with bargain hunting at after-Christmas sales, gift exchanges and returns, parties – and leftovers! Most of us have turkey, ham, mashed potatoes, roast beef, or cranberry sauce sitting in the refrigerator, covered with foil and plastic wrap. And lots of candy canes on the tree.
This week I will be posting some delicious recipe ideas using the remains of your Christmas feast to make wonderful meals and treats. They are, of course, good enough to serve to company. But also treat your family to a warm, comforting meal on one of the cold and crisp days after Christmas.
Try some of the newer flavored flour tortillas for this easy wrap sandwich. You could also use any meat; chopped ham would be delicious.
Ingredients:
- 2 cups cubed cooked ham ( or Turkey)
- 1/4 cup honey dijon salad dressing
- 1/4 cup mayonnaise
- 1 green pepper, chopped
- 2 tomatoes, chopped
- 4 slices Muenster cheese
- 4 lettuce leaves
- 4 flour tortillas
Preparation:
In medium bowl combine ham, salad dressing, mayonnaise, green pepper, and tomatoes and toss to coat well. Place tortillas on work surface and line with lettuce leaves and cheese. Divide chicken mixture among tortillas and roll up tightly, enclosing filling. Wrap in waxed paper and chill until serving time. 4 sandwiches
