Easy Holiday Dessert of the day
Honey cake is a Rosh Hashanah tradition. This holiday honey cake is easy to make and delicious to eat.

INGREDIENTS:
Cake
3 cups all-purpose flour
2 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
¾ tsp salt
2 cups chopped peeled Granny Smith apples (about 2 medium)
2 tsp orange zest
3 eggs
1 cup granulated sugar
¾ cup honey
¾ cup vegetable oil
½ cup brewed coffee, cooled
Frosting
1 cup powdered sugar
3-4 tsp orange juice
DIRECTIONS:
1. Preheat oven to 325°F. Spray Stoneware Fluted Pan or 11 cup Bundt pan with nonstick cooking spray. For cake, combine fl our, pumpkin pie spice, baking powder, baking soda and salt in small bowl; set aside.
2. In large bowl, beat eggs on medium speed of electric mixer. Add sugar, honey, oil and coffee; beat until smooth. Add fl our mixture; beat just until combined. Fold in apples and zest. Pour batter into pan.
3. Bake 1 hour, 10 minutes to 1 hour, 15 minutes or until wooden pick inserted near center of cake comes out clean.
4. Cool cake in pan 10 minutes. Loosen from sides and center tube. Invert onto cooling rack and cool completely. Combine frosting ingredients and spread over cooled cake. Cut cake into slices and serve.
Yield: 16 servings
